Vegan Potato Salad

Not every dinner works out for me! I really wanted to try and make my own chicken (less) nuggets but when I started to gather the ingredients for them I realized I was missing several key items, it was late, and I really did not have the patience to try and find substitutions. SO, we improvised and ran to the market quickly before they closed and bought pre made nuggets! Most of what I make is homemade and I hate buying stuff like that, but sometimes you just have to! We both really liked the nuggets (we had never tried them before), and although they are not very good for you, I think it’s ok to have them one in a while! Generally speaking we both eat very healthy so we didn’t feel too bad about indulging in these nuggets. I will try to make homemade nuggets again soon!

At least this meal was not a total wash and I can share my recipe for Vegan potato salad! Summer bbq’s are finally here and this will be a perfect dish to bring to parties!

ingredients

Ingredients:

-6 – 8 yukon gold potatoes, peeled and diced into cubes

-1/2 of 1 sweet onion, chopped

-3 stalks celery, chopped

-1/4 Cup dill pickles, finely chopped

-3/4 C – 1 C vegan mayonnaise

-2 teaspoons yellow mustard

-1 Tablespoon sugar

-1/3 teaspoon salt

-1/4 teaspoon pepper

-Paprika to taste

^and these pickles are amazing! I always have these in my fridge

Directions:

-Place the diced potatoes in large pot and cover with water. Boil potatoes for about 20 minutes, or until tender

-Once the potatoes are tender, drain the water out of the pot. Let the potatoes cool before mixing in the other ingredients. If you are in a hurry, you can rinse with a few dashes of cold water to speed up the cooling process

-Put the cooled potatoes, onions, and celery in a large bowl. Add the mayonnaise, mustard, pickles, sugar, salt, and pepper and stir to combine. The amount of mayo needed will vary depending on the size of the potatoes. Add more of less if needed

-Sprinkle with a dash of paprika before serving, if desired

Great news! I found a Vegan wine at one of our local liquor stores! They only have red (at this store anyway), and the cabernet is really great! Finding an organic, Vegan wine I was expecting it to be expensive, but it only costs $12.00!!!! As you can tell I am very excited . . . if you see it at any of your liquor stores, I would encourage you to try it. SO. GOOD.

I never knew that wine wasn’t Vegan. Many wines contain gelatin, casein, isinglass (substance obtained from dried fish bladders), and albumin (egg whites) in them. No good!
