No Bake Almond Butter & Coconut Bites

These bites made for a perfect snack! Ironically I made these for Sean when he went away for a Bachelor Party weekend, and that groom just got married this past Saturday! Congrats to Michael and Marissa!

Dry Ingredients:

-3/4 Cup unsweetend coconut shreds or flakes

3/4 Cup gluten free rolled oats

-1/4 Cup ground flax seed

-1/4 Cup finely chopped almonds or other vegan add ins (chocolate chips, raisins, etc)

Wet Ingredients:

-3/4 Cup unsalted almond butter

-1/4 Cup pure maple syrup

Not sure why the butter is in that picture, because I don’t think I ended up using it!

Directions:

-In a large bowl mix together all of the dry ingredients: coconut, oats, flaxseed, and almonds. Set aside

-In medium bowl whisk together all of the wet ingredients: almond butter and maple syrup

-Pour wet mixture over dry mixture. Fold together until well incorporated

-Scoop mixture into your hands. Roll and press into bites. If the mixture is a little dry, add in a little more almond butter or maple syrup

This past weekend was so much fun. One of Sean’s best friends got married, and it was magical! We had the best time all 3 nights, got to dress up, dance, and be surrounded by great friends and beautiful venues ❤ Yesterday we spent the day with Sean’s parents, got in some beach time (and my first ocean swim of the season!), and made it home just in time for Game of Thrones
