Tempeh Gyros w Tofu Tzatziki

I love that I’ve been cooking Vegan for over 1 year now and am still finding new ways to cook with Tempeh and Tofu! This Tempeh Gyro hit the spot, and I think the Tofu Tzatziki was even better than regular tzatziki 🙂 I also served these with oven roasted potatoes and steamed asparagus

Tempeh Gyro Ingredients

Ingredients – Tempeh Gyros 

-8 oz package of tempeh, sliced about 1/4 inch thick

-2 cloves garlic, minced

-1.5 teaspoons oregano

-1 teaspoon onion flakes

-1 teaspoon salt

-1 teaspoon ground black pepper

-1/2 Tablespoon garlic powder

-1 teaspoon thyme

-4 Tablespoons vegetable broth

-2 Tablespoons Bragg Liquid Aminos

-1 teaspoon white wine vinegar

-Juice of 1/2 a lemon

-Wraps/toppings —I used lettuce, tomato, celery, and avocado — of your choice

Directions:

-Combine all of the ingredients for the marinade (except for the tempeh) in a shallow dish & whisk to combine. Add the tempeh slices & marinade for a couple of hours, or overnight, turning tempeh pieces a few times

Tempeh Gyro

-When the tempeh is done marinating heat a skillet & add all of the tempeh along with the marinade. Brown the tempeh on both sides

Ingredients – Tofu Tzatziki 

Tofu Tzatziki Ingredients

-1 1/4 Cup silken tofu

-1/2 Tablespoon garlic powder

-1 clove garlic

-1/4 teaspoon salt

-1/2 teaspoon dill weed

-1/4 teaspoon ground mustard

-1 teaspoon dried onion flakes

-1 Tablespoon vegetable broth

-1 teaspoon white wine vinegar

-Juice of 1/2 a lemon

-Desired amount of diced cucumber

Directions:

-Combine all of the ingredients in a food processor & process until smooth. Pour the mixture into a container or bowl & stir in the diced cucumber. Store in the refrigerator to marinate for a couple hours

-When ready to eat, take the tzatziki out of the refrigerator to take off the chill. Wrap the tortillas in foil & gently warm in the oven

Tofu Tzatziki 1

Ingredients – Roasted Red Potatoes

Roasted Potatoes

-Potatoes

-Oil, about 2 Tablespoons

-Mrs.Dash spice mix

-1/2 onion, chopped

-Desired amount of whole garlic cloves

Directions:

-Toss all ingredients in oven safe dish

-Roast at 400 degrees Fahrenheit for 40 – 60 minutes

And then I just steamed some asparagus!
