Oreo Truffles

We spent the weekend celebrating Sean’s dad’s 70th birthday and it was so fun! I love getting to spend time with his family. Sean’s dad is actually a Vegan as well, so I promised him I would make him his favorite, my enchiladas. I also made guacamole (which I could probably eat every day of my life and never get sick) and Oreo Truffles.

Sean and his dad love sweets so I figured I had to make some sort of dessert…which was not easy for me because I hate chocolate! I know, I know I’m weird, but ever since I was around 4 years old I just started hating sweets and I still do! For one of my birthday dinners we were at a restaurant and my dad had the servers put a candle in my salad, funny . . . but I know I am so lame! And last year Sean ate my birthday dessert for me! Anyway, I hate making food that I can’t try after . . . it kills me because I will never actually know what they taste like!  Thankfully, they were a big hit and everyone loved them, even the kids! Sean described them as being very rich in flavor. In my mind, true love is making Oreo Truffles for your boyfriend and his family when you dislike chocolate more than anything ! ❤

Oreo Truffle Ingredients

Ingredients:

-1 package Oreos — If you want to make this recipe gluten free they sell gluten free oreos! —

-8 oz container Vegan cream cheese — I love GO VEGGIE products, I always have something of theirs in our fridge! —

-1 package Vegan chocolate chips

-Coconut oil

Directions:

-In a food processor, crush cookies into a fine consistency. Pour into a large bowl

-Stir in softened cream cheese & mix everything together to create a nice dough

-Roll the mixture into 1″ balls & set aside on a wax paper covered cookie sheet

-Melt your chocolate chips (start with 1/2 the bag) in the microwave for 30 seconds. Stir & heat again in 15 second intervals until melted. Stir in a small amount of coconut oil to keep the chocolate nice & shiny

-Dip oreo balls into melted chocolate & set aside again on the wax paper. Continue until they are all covered in chocolate, melting more chocolate if necessary — This part was so tedious that I got too frustrated to make them this way! Instead, I added the melted chocolate to the batter, mixed all the ingredients together, added some coconut oil & make the truffles that way! —

-Sprinkle with any sprinkles or crushed cookie if desired

-Refrigerate for about 15 minutes, then serve — I actually froze these little treats instead of refrigerating them, you can do either! —
