BBQ Cauliflower & Chickpea Tacos w Creamy Lime Slaw

Getting y’all ready for Taco Tuesday! This recipe is definitely one of my favorite taco recipes that I’ve made so far . . . & the Creamy Lime Slaw makes them extra delicious ❤

Creamy Lime Slaw Ingredients

Ingredients – Creamy Lime Slaw:

-14 oz bag cole slaw mix or 6 – 7 Cups thinly chopped cabbage & carrots

-1/2 Cup Vegan Mayo

-1/2 teaspoon dijon mustard

-1/2 teaspoon maple syrup

-1.5 teaspoon apple cider vinegar

-1/4 teaspoon celery salt

-1 teaspoon water

-Juice of 1 lime

BBQ Cauliflower Rub Ingredients

Ingredients – BBQ Rub

-1 teaspoon cumin

-1 teaspoon paprika

-1 teaspoon garlic powder

-1 teaspoon onion powder

-1 teaspoon chili powder

-1 teaspoon coconut sugar

-1/2 teaspoon smoked paprika

-1/4 teaspoon black pepper

BBQ Cauliflower Ingredients

Ingredients – BBQ Cauliflower Tacos

-1 head cauliflower

-1 1/4 Cup chickpeas, drained & rinsed

-1 teaspoon oil

-Corn tortillas

-Sliced jalapeños, if desired

Directions:

-Preheat oven to 375 degrees farenheit

-Make the slaw: in a medium sized bowl add all of the slaw dressing ingredients. Mix together until a creamy sauce has formed

-In a large bowl add the cabbage mixture & pour dressing over. Mix until everything is combined. Place in the refrigerator until ready to use

Creamy Lime Slaw

-In a small bowl or jar, add all of the BBQ Rub ingredients & mix well

-Separate all of the cauliflower florets & chop them into bite size pieces. Place florets & chickpeas into glass baking dish, drizzle with oil, & sprinkle with BBQ Rub. Depending on the size of the head of cauliflower you may not need to use all of the rub. Toss everything together with your hands so that the cauliflower & chickpeas are coated in the rub. Place the baking dish in the oven & bake for 25 minutes, flipping once

-If desired, warm up corn tortillas on the stove or in the oven. Add about 1/4 Cup of the cauliflower/chickpea mixture to each taco & top with a few Tablespoons of slaw. Top with sliced jalapeños if desired

Did you know that foods such a pickles or jarred jalapeños contain the food coloring ‘Yellow 5’ ? Look for organic choices instead of buying the more popular brands because food coloring is extremely bad for your health!

Some specific effects of Yellow 5 are: allergies, hyperactivity, risk of cancer, migraines, fatigue, and anxiety. I always say that as a Vegan it is important to read labels to make sure there are no animal products being used, but you should also be educated on other ‘bad for you’ ingredients . . . and that applies to everyone!

Next time you go to the grocery store, pick up any jar of pickles or jalapeños and you will be surprised to see that Yellow 5 will be listed on every ingredients list. No good!
