Vegan Corned Beef Tips & Cabbage

Happy St. Paddy’s Day! We have had the best day staying in, being productive, cooking, and staying cozy by the fire. Although we aren’t participating in the festivities downtown, I’m still rocking green and wanted to make a typical Irish dinner. This was our first time trying Gardein’s Beef – less Tips and they definitely do the trick! Like I always say, we don’t really buy mock meats often, but every once in a while it’s ok 🙂 Let me know what you think about this recipe!

Ingredients

-1 package Gardein Beef – less Tips

-1 Tablespoon white wine

-3 teaspoons Bragg’s liquid aminos

-1 clove garlic, minced

-1 Tablespoon dill pickle brine (that’s the juice in the pickle jar)

-1 teaspoon onion powder

-Dash of liquid smoke

-1 teaspoon extra virgin olive oil

-1 red onion, sliced

-1 head green cabbage, cut into 4

-6 red potatoes, cut in half

-6 Cups Better Than Bouillon – Vegan Beef (I just used the vegetable version)

-Pink himalayan salt & black pepper to taste

-Malt or balsamic vinegar to add a little bite to the cabbage & potatoes (optional)

Directions

*You can follow the instructions below or you can just add all of the ingredients to a slow cooker & cook it that way instead – whichever way you have time for!*

-Put the Gardein, white wine, 1 Tablespoon Bragg’s, dill pickle brine, liquid smoke, garlic, onion powder, & extra virgin olive oil in an airtight container & shake to mix. Then put it into the fridge & let marinade for 2 hours

-Preheat the oven to 350°F

-Put the bouillon in a large stock pot & heat on high. Once it begins to boil, toss in the cabbage, potatoes, 1/2 of the red onion, & 2 Tablespoons of Bragg’s. Cover & let boil until potatoes are tender

-While they are boiling, place your marinated Gardein in a glass dish with the marinade & put the remaining 1/2 of the red onion over the top. Bake for 10 minutes. Then take the dish out of the oven & pour the marinade out of the dish. Put the dish back in the oven & bake for an additional 20 minutes or when you have reached your desired brown – ness (is that a word)

-Serve the potatoes & cabbage with a slotted spoon from the stew pot with pink himalayan salt, black pepper, & (optional) malt or balsamic vinegar
